I made these awesome potatoes for this week's challenge from The Pioneer Woman Cooks. (If you don't already follow her blog or have it in your RSS reader or whatever, definitely add it. She's great.) It felt like a bit of a cheat, since it's not really a main course and isn't even intentionally Vegan, but I never did say I was only going to do main courses did I? I should cut myself more slack.
Anyway, these were really awesome. Everyone loved them, and we even went out today and bought another bag of potatoes, so we can make them again this week. (It was going to be today, but we got distracted by football and other miscellaneous things.) I followed the recipe exactly, but we also happened to have some scallions and sour cream in the fridge, so some people in the family topped theirs with that. Mmmm.
Not sure what I'll do next week yet, but I'll try to give more advanced notice this time in case anyone out there is following/cooking along.
